FRUIT BRUNCH CUPS (healthy organic breakfast)


FRUIT BRUNCH CUPS

Ingredients
10  (7-inch) flour tortillas 
1 package (8 ounces) light cream cheese, slightly melted 
4  large eggs 
1 package Simply organic fruit dip mix
1/3 cup finely diced pineapple, drained well 
Directions
Preheat oven to 200 degrees. 

Warm tortilla shells in microwave until easy to bend, about 30 seconds. Carefully fold shells and place into large-holed muffin pan or separate muffin cups. Place in oven and bake 5 minutes. 

Meanwhile, in a large mixing bowl, blend cream cheese and eggs together. Blend in Simply Organic Fruit Dip Mix, then pineapple. 

Remove tortillas from oven and turn heat to 300 degrees. Fill each shell with approximately 1/4 cup mix. Return to oven and bake 20 to 30 minutes or until eggs set up.
